Looking for the tastiest muffin or just bored of cakes? Let’s try this applesauce muffin to make the world a happier place!
Applesauce muffins are exactly the same as applesauce cakes but made in a muffin form. If frosting is added on top of a muffin, it becomes a cupcake.
Essentially, using the exact same ingredients as in the applesauce cake but fill them into muffin forms, we’ll have applesauce cupcakes with all their cuteness some people are so fond of. Others don’t find them nearly as interesting, going as far as publicly despise not just the cakes but people who like them too.
Apparently, cupcakes and muffins can be as dividing as politics where at the end all of us are going to eat the same thing but capable of not just to argue about it for months but hate each other over them.
So in case someone isn’t really into muffins and cupcakes but somehow made it into this far, just jump over to the applesauce cakes to smooth out the wrinkles.
The rest of us roll on like good marbles to enjoy applesauce cake in the form we like it best, do not care what anybody else has to say about it, since we know better than the rest, muffins and cupcakes are the best.
Apple sauce
Applesauce muffins needs about 2 cups / 500g Applesauce. Check out how to make Applesuce.
- 1 lb / 500g Apple
- ½ cup / 125ml Water
- ½ / 10g Lemon peel
- 1 tablespoon / 15ml Lemon juice
- ½ teaspoon / 2.5g Cinnamon
- ½ teaspoon / 2.5g Salt
Applesauce Muffins
(makes 16)
- 3 tablespoon / 50g Butter or vegetable oil
- 2 pieces / 110g Eggs
- 2 cups / 500g Applesauce
- 1 teaspoon / 5ml Vanilla
- 1 teaspoon / 5g Salt
- 2 teaspoon / 5g Cinnamon
- 2½ cup / 300g Flour
- 1 teaspoon / 7g Baking soda
- Optional
- 1 teaspoon Ginger (ground)
- ½ teaspoon / 1.25g Nutmeg (ground)
- ¼ teaspoon / 1.25 Allspice (ground) (highly recommended)
Frosting (optional for cupcake)
- ¾ cup / 150g Creme cheese
- ¼ cup / 50g Greek yogurt
- ½ teaspoon / 4ml Vanilla extract
- 1 tablespoons / 15g Honey or sweetener of choice to taste

How to make Applesauce Muffin
Apple sauce

- Peel, core and slice up the apples. Pour water into a pot then add the apples, lemon peel, lemon juice, cinnamon and salt.
- Place a lid on, bring it to boil. Reduce heat and cook apples until soft, for about 30 minutes. Remove the lemon peel then puree the apples with an immersion blender.
Applesauce Muffin
- Melt butter or simply use vegetable oil. Add eggs and beat until light and fluffy.
- Add the apple sauce and vanilla extract. Beat in salt, cinnamon and any optional ingredients like ginger, nutmeg and allspice. Allspice is highly recommended as it gives the cake a completely different character.
- Beat the flour in batches and finally the baking soda. It’s important to add baking soda at the end, without delay pour the batter into a baking form then place it into the preheated oven, otherwise the cake won’t raise.
- Pour the batter into our favorite muffin forms. Be quick about it otherwise our muffins won’t raise at all.
- Place the muffins into the middle rack of a 360°F / 180°C preheated oven until golden brown spots start to appear on top, for about 30 minutes.
Frosting
If not into cream cheese, try the tastiest Buttercream frostings!
- Whisk cream cheese until creamy. Add Greek yogurt, vanilla extract and sweetener of choice.
Assembly
- Possibly with a pastry bag or a similar fancy equipment that is capable of making gorgeous lines from cream, place some cream on top of the muffins. Decorate with bright colored edible stuff, like finely cut apple peel or for the more sophisticated ones berries, cherries or drizzle on some grated chocolate.
