Chicken Stuffed Avocados Recipe

Ingredients

• 2 medium Avocados
• 200g Roast chicken (boneless, finely cut)
• ½ Red onion (diced)
• 1 teaspoon Dijon Mustard
• 2 teaspoon Sour cream or creme fraiche
• ½ teaspoon Salt
• ½ teaspoon Black pepper (optional)

How to make Chicken stuffed avocado

1. Scoop the avocado out. For decorational purposes leave a small border otherwise take everything out.
2. Dice up the avocado and the red onion.
3. Shred the chicken up finely.
4. Place all the ingredients into a big enough bowl.
5. Mix everything together
6. Fill the salad back into the halved avocados or just spread it on something worthy.
